I have never been a master chef. For many years I thought making spaghetti qualified me as a cook. I was really proud of myself when I began adding fresh garlic and grating cheese on top. Now, the idea of making spaghetti bores me to tears because I have discovered the joy in making myself a good meal. These days I am a cooking machine; I chop, I dice, I marinate, I stir-fry things and I rub meat. I use to like to poke with my finger the meat in the supermarket that is under plastic wrap and have often provoked not only strange looks from other shoppers but also from my friend who shops with me, so rubbing meat never was really too far away for me.
I love a good taco with all the trimmings in a nicely toasted crunchy tortilla shell. The only problem I have is with the minced beef; it is too heavy and greasy and bites me back about an hour later. I have used chicken in the past but haven’t been satisfied with the taste, so what to do? Enter my new best friend: minced pork. It’s full of protein, it’s lean and it doesn’t revisit me later. So instead of eating tacos, I now eat Porkos! Once you have tried a pork taco you will never go back to beef, especially if I make it for you. I don’t charge much either, only $2.00 per Porko but if you want me to rub your meat that is extra.
